Sausage & Kale Scramble

Ingredients: (Serves 2)

  • 2 Sausages (we use Adelle’s - chicken/apple or homemade pheasant)

  • 2 Cups Kale, massage kale after rinsing

  • ½ Red Bell Pepper, diced

  • ½ Red Onion, diced

  • 1 ½  Medium Sweet Potatoes, cut into 1 in cubes

  • Olive or Coconut oil

  • 2-3 eggs

Instructions:

  1. Preheat oven to 400.

  2. Place diced sweet potatoes on a parchment lined baking sheet, drizzle with oil, toss to coat. Top with salt/pepper to taste. Bake for 15 min. Set aside.

  3. In a large non-stick skillet, place peppers, onions, and sausage drizzle with oil and cook until veggies are al dente. Season with salt/pepper.

  4. While veggies and sausage are cooking, cook eggs however you like them. I prefer over medium so that the yolk runs over everything! 

  5. Add the kale to the skillet just before the veggies are done. Cook until kale is slightly wilted. Should only take a minute or two. 

  6. Top with the eggs and toppings of your choosing. 

Optional toppings: cheese, avocado, salsa, pesto, or hummus.
